Chia Pudding with Ginger and Strawberries

-Ingredients-

1 banana

1-2” piece of fresh ginger (peeled, diced)

4-5 fresh strawberries

1 13.5oz can coconut milk

1 tbsp honey

½ cup chia seeds

………

-Method-

Blend all ingredients except chia seeds (you can leave strawberries stems on) until smoothie consistency. Pour into a medium-size mixing bowl and fold in chia seeds until thoroughly integrated.


Refrigerate overnight (minimum 4 hours) and serve with fresh fruit.
