Quick-pickled Red Onions
-Ingredients-
2 red onions
½ cup vinegar (rice or apple cider)
1 tsp salt
1 tsp sugar
¼ tsp black pepper
-Method-
Cut onions into ¼” slices. Place in medium size pot along with all ingredients. Cook on medium-low heat until onion just starts to soften stirring regularly. Take off heat and let cool. Transfer to quart jar and refrigerate for up to a month.
-Alternate Method-
Process onion as mentioned above, but instead of putting the slices in the pot, stuff them into a quart jar. Put remaining ingredients into a small pot on medium heat and simmer until salt and sugar are dissolved. Then pour hot brine over the onion and close the lid of the jar. Shake so that all slice come in contact with brine. Continue shaking every few minutes until onion starts to soften. It will continue to soften in the jar, but will result in a firmer texture than if cooked. Refrigerate for up to a month.
